About Palm Stearin
Palm stearin is the harder, higher-melting fraction separated from palm oil by controlled crystallisation and filtration. Fractionation cools the oil until the saturated triglycerides crystallise out; those crystals, pressed and collected, become stearin, while the liquid that passes through becomes olein. No chemistry is involved. It is a purely physical separation, which is why stearin is accepted in clean-label formulations.
Its value to manufacturers is structural. Stearin brings hardness, plasticity and a defined melting profile to a formulation without hydrogenation, which means no trans fats. For margarine and shortening producers it delivers the solid fat content that gives a spread its body; for bakery it holds lamination in pastry; for soap and candle makers it provides the firmness and clean burn that softer fats cannot.
